Strugurii sunt culesi la momentul ideal atat manual cat si mecanic iar apoi samburii sunt inlaturati dupa care incepe presarea strugurilor. Mustul rezultat se lasa la fermentat 8 zile la temperaturi intre 16-19 degC. Dupa se adauga micul procent de must Pinot Noir si se trece la a doua fermentare care dureaza 30 de zile folosind metoda Martinotti-Charmat iar apoi se lasa la invechit 2 luni in butoaie de otel.
